Red Velvet Cupcake with Cream Cheese Frosting

Hi y'all!

Just wanna share this red velvet cake recipe I got from the baking workshop my best friend and I attended few months ago. :)

Ingredients:

cake flour 2 1/2 cups
white sugar 1 1/2 cups
baking soda 1 tsp
salt 1 tsp
cocoa powder 1 tsp
evaporated milk 1 cup
eggs 2 pcs
vinegar 2 tsp
vegetable oil 1 1/2 cups
red food coloring 2 tbsp
vanilla extract 1 tsp

Method:

1. Sift together cake flour, baking powder, baking soda, salt and cocoa powder.


2. In a separate bowl, whisk together eggs, oil, milk, vinegar, food color and vanilla until incorporated.
 

3. Using a hand whisk, mix together wet ingredients to the dry ingredients by "well method", until smooth and no lumps is visible.

4. Transfer to muffins cups about 3/4 full.




5. Bake at 350 F (180 C) for about 20-25 minutes or until toothpick inserted comes out clean.

6. Cool before frosting.




 
Cream Cheese Frosting

butter 1 cup
icing sugar 1 cup
cream cheese 1 bar
vanilla extract 1 tsp
almond extract 1/2 tsp

Procedure:

7. Bring ingredients to room temp.
8. Put everything in a food processor and mix until smooth.
9. Transfer to bowl and chill until set.
10. Using a paddle attachment, set cream icing at medium speed until soft peaks form.
